My Bloody Valentine Cake

Posted by Jen Chiappisi on Sunday, January 31st, 2010 | Read the Rest

Needing to turn out a cake for a visit to my parent’s house, I turned towards another boxed cake mix. This time around, at the word of a family friend, I used a Pillsbury cake box mix and let me tell you – it is so much better for cake baking and decorating than Duncan Hines or Betty Crocker. It was perfect. The crusts were slightly harder, which made decorating easier and the inside was wonderfully and perfectly moist. It was easy to decorate and delicious to eat. I will be using Pillsbury cake mixes from now on for all box mixes that I need to use.

I finally finished my cookie decorating. This week got a little more hectic than planned and I had less time to play with my baking and decorating pieces in the evenings than I would liked. Okay, so maybe not ‘fields’ per say, but I did finish seven lovely yellow Wilton Roses per the Wilton Cake Decorating Book 1. I have to be honest, when I started the roses, making the triangle-esq shaped bud that goes under them, I really thought that I am simply not a flower-creator. They just were not looking correct. The book shows them to be beautiful cone-shaped things and mine looked more like the tips of baby bottles with a long snout at the top.

Sugar Cookies + Buttercream Icing

Posted by Jen Chiappisi on Saturday, January 2nd, 2010 | Read the Rest

My sugar cookie decorating didn’t go quite as planned. When attempting to draw lines around the outer rim of the cookies and spread white buttercream icing cleanly within the line it didn’t work well. The lines went fairly well, but then when I would take my frosting spatula and go next to them, it would often pull them off completely.

Buttercream Frosting, How I Love You

After Duncan Hines bested me with their Lemon Cake Box mix, I was determined to do better with the frosting and decorating of the cake. I started off with the recipe for Buttercream Frosting listed in my Wilton Cake Decorating – Class 1 booklet.
